Quinoa Salad with Nuts and Fruit

Ingredients:

  • 1 cup cooked quinoa
  • 1 small onion, finely diced
  • 2 stalks of celery, finely diced
  • 1 cup almonds, walnuts, or other nuts, chopped
  • ~ 5 to 6 scallions, chopped
  • ½ cup dried cranberries or raisins, chopped
  • 1 bunch flat leaf parsley, chopped (optional)
  • 1 apple, pear, pineapple or other fruit (diced)
  • 1 large lemon, juiced
  • Oil for drizzling
  • Fine sea salt and freshly ground black pepper to taste
  • Splash of wine (optional)

Directions:

  1. Cook quinoa and let it cool in the fridge.
  2. Saute onion and celery with cooking oil. Season with salt and pepper. Set aside in a large salad bowl.
  3. Add parsley and chopped dried cranberries (or raisins) and scallions to the onion and celery mixture.
  4. Add apple (or other fruit) chunks. Squeeze lemon over fruit to season and prevent it from browning.
  5. Add quinoa and nuts, drizzle with oil. Add salt, pepper, and wine to taste.
  6. Mix well and cool completely. Allow flavors to meld for at least 20 minutes.

Quinoa Salad with Zucchini, Mint, and Pistachios

Ingredients:

  • 1 cup cooked quinoa
  • 1 medium zucchini, thinly sliced (about 2 ½ cups)
  • 1 clove garlic, thinly sliced
  • Coarse salt and freshly ground pepper
  • ½ cup scallions, thinly sliced
  • 1/4 cup roasted salted pistachios, chopped
  • 1 large lemon, juiced and zested (optional)
  • 1/2 cup packed fresh mint leaves, chopped, plus more for garnish
  • Oil for drizzling

Directions:

  1. Cook quinoa and let it cool in the fridge.
  2. Cook zucchini on medium-high heat; stirring occasionally, until tender and golden, about 7 minutes.
  3. Add garlic; cook until fragrant (do not let brown), about 30 seconds. Season with salt and pepper and add to quinoa.
  4. Stir in scallions, pistachios, lemon zest and juice, and mint. Drizzle oil and season with salt and pepper and serve immediately.
